As I mentioned in my previous post, I could not wait to cook the kimchi that I made a few weeks ago. I have some fresh mushrooms available...enoki and shiitake and making kimchiguk ( korean soup )with them would be great. Simple yet deliciously appetizing and not forgetting to mention that this soup is so healthy that I don't mind having this kimchiguk everyday. You can have this kimchiguk with noodles or rice. Either one, it is delicious ! Read on to see how easy it is to prepare this kimchiguk.
1 cup of ready fermented kimchi with sauce,
cut the cabbage into smaller bite size pieces
pour in 1.5 cups of water into a claypot and
boil on medium heat till the water boils,
add in the cut kimchi together with
the kimchi sauce, add in the fresh enoki and
sliced fresh mushrooms and simmer till
the mushrooms are cooked.
serve with rice or noodles...yummy!
Spicy Shiitake Mushroom Kimchiguk - for two persons
Ingredients:
1 cup of kimchi - cut the napa into bite size pieces
1.5 cups of water
1 bunch of enoki mushrooms - wash and drained dry
6 pieces of fresh shiitake mushrooms - wash, drained and sliced
Method:
Pour in 1.5 cups of water into a claypot and boil on medium heat till the water boils, add in the cut kimchi together with the kimchi sauce, add in the fresh enoki and sliced mushrooms and simmer till the mushrooms are cooked. Off heat and serve with either noodles or rice.
