Oven Fried Onion Rings

This is something I baked for the Piggies when they were home for CNY...a finger food to go with the cold beer.  Something simple to whip up and yet finger licking good.   Yea...Oven Fried Onion Rings !!! It is addictive and healthy too coz it is oven fried instead of deep frying. Crunchy chips on the outside and sweet and soft on the inside....whoa, the perfect food to go with the beer.  Heaty maybe but definitely much healthier :)  But seeing them downing down cans and cans of cold beer , I am not worried the heat gets to them .  Read on to see how easy it is to make this onion rings finger food :)

After reading a post on these on Min's blog, I quickly bookmarked it for the CNY when the Piggies are back home.  I want to give them something that will make them happy...and these would be perfect to go with the beer that Wild Boar bought for the CNY LOL!  Easy to whip up too.

the batter mixture must not be too watering nor too thick...
should be the consistency of a  pancake batter

dust the onion rings with the seasoned flour

dip the onion rings into the batter and make sure
the rings are totally covered with the batter , then roll
on the potato chips , make sure the rings are evenly
covered with the crushed chips

lay the chips coated rings on the greased baking sheet
and put into the preheated oven and baked till
the rings are golden

mmmm  not only taste good  but crunchy  too !

this is a good to go with cold beer...deliriously good :p

Oven Fried Onion Rings - adapted from Min's Blog And Zoom Yummy

Ingredients:

35 gm All-purpose flour
1/2 tsp salt
1/4 tsp black pepper
250 ml plain yogurt
2 eggs
70gm + 2 tbsp All-purpose flour
200 gm potato chips, finely crushed
2 large onion

3 tbsp vegetable oil
salt

Preparation :-

1. Preheat the oven to  200C

2.  In a large bowl combine 35 gm of flour, 1/2 tsp salt and 1/4 tsp black pepper.

3.  In another medium bowl, combine the yogurt, eggs and 70g plus 2 tbsp flour. Whisk until a smooth batter is formed.

4.  Crush all the chips finely and place them in a bowl too.

5.  Peel the onions and cut them into  1/2 inch ( 1 cm ) rings.

6.  Cover a baking sheet with a piece of parchment.  Drizzle with 3 tbsp vegetable oil, then pop it into the hot oven for 8 minutes- or until the oil just starts to smoke.

7.  In the meantime, toss the onion rings in the flour mixture.

8.  Dip each ring into the batter. Let the excess batter dribble off a little.

9.  Then coat the rings with the crushed potato chips.

10.  Place the rings on the hot baking sheet and bake for 8 minutes, then flip each ring over before baking for another 8 minutes.

11.  Sprinkle with salt while the rings are still hot.

Enjoy !
