A simple but an appetizing one like this will do when I am lazy to cook or when I am chasing after dramas. Due to many cell groups Xmas party invites the past few days, I have missed out many episodes of the korean and hk dramas. Now it is pay back time. I am glued to the idiot box for hours chasing after missing episodes. That is one thing good having about Astro On Demand, you can record the show while you are away and watch the downloaded ones when one is free. Thus, the past few nights, Wild Boar and myself have been eating simple. As simple as just this one dish, Kung Po Chicken With Basil, for dinner will do :p Btw my new cookbooks are still waiting for me to caress them........LOL! my hands are busy with the remote control at the moment :p Read on for the recipe.
Chicken breasts are best cooked with lots of spicy gravy. Kung Po style with an additional of basil would be exactly what I say perfect for the diced chicken breasts. It gives oomph to the dish with these homegrown basil. I know many of you have eaten Kung Po style but seriously, the addition of these leaves makes the dish more appetizing :) Not only is it appetizing, it is easy to whip up especially when you are in a preoccupied mood ! LOL! Wild Boar asked to add more basil if I am cooking this again...hahaha looks like he knew I will be very preoccupied with the idiot box the whole of this month :)
Kung Po Chicken With Basil
Ingredients:
1 large chicken breasts - diced and seasoned with 1/2 tbsp cornflour
1 large red onion - quartered
3 dried chillies - soaked and remove seeds
a few sprig of basil leaves
3 cloves of garlic - chopped
1 tbsp of canola oil
seasoning sauce -
mix together the following ingredients in a bowl and keep aside
1 tbsp of oyster sauce
1 tsp of thick soy sauce,
1/2 cup water
a shake of white pepper
salt to taste
Method:
In a wok, heat up oil and saute the garlic till fragrant, add in dried chicken, onions and chicken breasts . Stir fry till cooked. Add in the seasoning sauce and basil leaves and continue to cook till the chicken meat is cooked and the gravy thickens. Serve this with hot rice.
