Cheesy Stuffed Portobellos


I like to transform leftover dishes into a totally new dish.   Whenever there are roast meat left  the night before, I will stuff them in portobellos and top them with lots of cheddar cheese the next day....portobellos mushrooms are easily available at Jusco or Tesco. I will pick them up on the way back from work and have them stuffed with the leftover roast meat.  I can have these cheesy stuffed mushrooms and some apple /celery and  frisee lettuce salad for dinner and I will happy for the rest of the night. I love mushrooms and having them stuffed with leftovers meat and baked them with cheese.....mmmmmm  I dont mind the added calories ....and anyway I need more calcium so cheese is a good source of calcium.....LOL! well , my friends used to say this about me...." as long as you like the stuff, you will try all excuses to justify your eating of those you are suppose to abstain from "  I think this applies to most of us :p  okay... maybe just me ! * oink

The stuffing can be anything you like...I diced the leftover roast  meat into smaller pieces , added cut red and green chillies, chopped pistachios nuts , chopped basil leaves ...mixed them well and stuffed the mixture into the portobello caps which has been drizzled with olive oil. Topped with grated cheddar cheese and baked them in aluminium foil for 30 minutes until the cheese has turned brown.  Served these delectable portobellos with my favorite salad !  Yea,  a simple meal that I like very much.

  10. portobello is definitely my favourite! There's a meaty taste in it that almost smell like beef when sauteed in butter.
    I always buy those slash priced ones from Tesco, although sold at a discount, but look very fresh.
    After purchasing, keep one week in my fridge, still more than ok!
    So, I rarely buy in Jusco cos Jusco not that fresh (compared to Tesco for mushrooms), and price is not a bit lower.

    Wendy....yea, I do agree with you that Tesco has better ones and when they are on offer and much cheaper too. But when I am needing it in emergency like this instant , I will grab a pack from Jusco coz my WB wont take me to two places. " His famous words... " buy from here , same one la ...after all you are here to get your fruits ma " I will just roll my eyes and have to pay more la !

    Jusco offers better fruits though but now Tesco has redesigned their fruits counters ...looks better now and more organized. But fruits , I still prefer Jusco :)

  13. These mushrooms look fantastic! Stuffing mushrooms is such a great way to use up leftovers, I wonder why I rarely do it.

  16. Mary....I normally use leftovers roast for stuffing the portobellos and added in some nuts and chillies...and that is enough to make this shrooms delicious :)
