Stir Fry Asparagus Beans With Dried Shrimps


















Wild Boar and I have been away to a church retreat  in Cameron Highlands over the weekend and came back happy :)))  A short break but it was rejuvenating enough for us though we wanted more days :p    Back to this dish, I bought some of these asparagus beans back from the trip to Cameron Highlands.



















This looks like the french beans but it is darker green  in color and more rounded.  It is best if cooked stir fried with dried shrimps and garlic or with shrimp paste and chilli.  Crunchy texture and taste like the asparagus thus it is called asparagus beans or '  lou soon dau ' in cantonese.  Selling for RM6 a kilo which is consider cheap.  It has a natural sweetness...I love it and shall be looking for this beans from the local market.



















Stir Fried Asparagus Beans With Dried Shrimps 


1/2 kilo of sparagus beans - soaked, washed and drained- cut into 1" length
1/2 cup of dried shrimps - soaked, washed and drained
2 cloves of garlic

thickening sauce:-
1 tbsp oyster sauce
1/2 tbsp of chinese rice wine
1/2 cup of water
1/2 tsp of corn flour
a dash of white pepper


Method:

Heat wok , add in 1 tbsp of grapeseed oil . When the oil is smoking , add in garlic and dried shrimps. Lower heat to medium, and continue to saute till the dried shrimps is aromatic. Add in the asparagus beans and stir fried till cooked.  Add in the thickening sauce and stir fried till the beans are coated with the sauce. Dish up and serve with rice.

  1. I used to visit Camerons very often, few times a year, but with 2 kids....sigh, no longer the same story. What more with 3. I used to buy the flat type of green bean there. Very nice. Next time, must buy this lou soon dau.

    Wendy...don't worry, when your gals are bigger, they can help look after Reuben then you can relax and enjoy the cold air and all those fruits you can buy back home for cakes. I wanted to get the passion fruits selling for RM10 a big bag of it ,but because of busy taking care of the group of people under me,( group leader ) I forgot to grab a bag home...imagine making ice cream with them...and cheesecake...gosh a miss though :(

  5. Cheah....yea you must buy back a kilo at least...one cooking half a kilo gone :)

    Ann...you can add in bacon etc or just plain with garlic and soy sauce. Just blanch them in hot boiling water. Make a sizzled oil of garlic and soy sauce . Pour over it and you have a yummy asparagus beans for dinner :)

  8. Little Inbox....so far I have yet to see them being sold at the wet market nor hypermart. That is why I bought back to try it out and it was good :)

    Lena...yea..none at the moment but later there might be. But in Cameron Highlands there are lots being sold at their wet market :)
