Slow-Roasted Tomatoes - French Fridays With Dorie


















It's Friday and it's FFWD again :)  Today's schedule recipe is slow-roasted tomatoes or Tomates Confites.  You can think of these more as a condiment than a side dish .  You can topped it with oil and packed in a jar , they can keep for a few weeks in the refrigerator. The long and slow roasting took 3 hours !!! And I was glad I did it !!!  Even Piggy Joshua , who came back for the weekend, gave a shout out that it was good :)

















By slow roasting them for 3 hours with olive oil , rosemary herbs , garlic , black pepper and sea salt,  helps concentrate and deepen their flavour . These slow roasted tomatoes are somewhere between fresh tomatoes and sun dried tomatoes with an extra hit of flavor. I have never tasted such aromatic tomatoes before.  Every piece bursting with the flavors of rosemary and garlic.  I made a big quantity of it,  since it took 3 hours of roasting time, topped with oil and packed in jar for further use. As suggested by Dorie, these tomatoes confites can be added into simple pasta  or chop them to go into spreads and dips. The beautiful thing is it can be topped with oil and can be kept for a few weeks in the fridge.  it was worth the waiting . At first I was quite reluctant to slow roast it for 3 hours...the electric bill will be high again this month :p but knowing and trusting Dorie, I knew I would not be disappointed and truly it was the most tasty roasted tomatoes I have ever eaten so far.  Two thumbs up and a toast to Dorie for creating  shriveled and a little dry looking tomatoes that tasted flavorful.  Don't be mislead by their dry look, press them gently and you see, they still have some juice on them.  

The ingredients are cherry tomatoes, fresh rosemary herbs, 
garlic, black pepper and sea salt and olive oil

though shriveled and dry looking , these tomatoes are aromatic
and every bite bursting with flavors...


















I served them as a side for the  pan fried dijon mustard pork chop
which I cooked for Joshua and WB 
and they both love the tomates confites :)


















I am glad I was not frightened off by the long and slow roasting time
or I will never know how great these Tomates Confites are...
I gave it a perfect 10 when it comes to rating this :)

  16. I am SO with you about having the oven on for 3 hours - the only reason I didn't hesitate (other than implicitly trusting Dorie...)is because I figured it Thursday evening and was in shock. Nana had made hers earlier -as usual- but we did not discuss it. I was struggling to stay up till they were done but the aroma in the kitchen helped big time. Glad you enjoyed it as much as Nana and I did.

  20. I finally got around to making them and they were perfect tucked into Bison Burgers I made last night. I'm afraid they aren't lasting long as I'm eating the rest like candy.
