Salmon In A Jar - French Fridays With Dorie


















Yay! its FFWD again !  I am most excited by today's recipe...Salmon In A Jar...why?  Coz salmon is my favorite fish and what more this preparation is so different from the rest. I have never tried  pickled cured salmon slices in spices and herbs infused olive oil before....that is why today's recipe is most interesting.  Dorie is brilliant and she has once again come up with such a delicious appetizer for us :)  Thumbs up...the salmon was well flavored with the spices and herbs.

















A beautifully flavored salmon appetizer to serve your family and friends who come for dinner.  These can be done days ahead and serve whenever needed.  The flavored oil can be used in your salad or pasta.  So do not worry about wasting the olive oil. 



The ingredients used are cured salmon chunks or fillet pieces ( curing process -  rub sugar and salt into the salmon and leave in fridge for at least 12 hours - rinse with cold water and pat dry with paper towel before using ),  red onions cut into rings, carrots into thin slices, thymes (I used rosemary ), bay leaf ,  black peppercorns , coriander seeds, olive oil.....that's it ...simple and easy to prepare appetizer :)  Place all the ingredients in the glass jar and covered with olive oil. Make sure all the ingredients are submerged in the oil.  Leave in fridge for 6 hours before serving.....easy to prepare and it such a  flavorful salmon appetizer.



















I make the potato in a jar too...this is same as making the salmon in a jar but with white wine vinegar or distilled white vinegar added to it.   This is another to die for appetizer.  You can serve this flavored potatoes as a side dish for your roast or add them to your veggie salad.  I used my garden rosemary for this instead of thymes .   Love the aroma of rosemary in the salmon and potato.  A keeper for sure :)

  1. This was a new challenge for me too, never cured anything before, and I was a bit nervous. But it seemed to turn out and nobody has died yet. Your pictures are wonderful, happy to hear that you liked it.

  2. I survived too! Haha, glad you liked it... I was surprised that my kids liked the cured salmon, in fact they might have thought it was a tougher version of salmon sashimi ;-). Like your lovely photos, btw.

  6. I think what surprised me the most is that the flavor was really subtle, in a good way, and actually tasted like something that cured for much longer than a couple of days!

  7. Rosa....for me too. I learned a new technique on how to make cured salmon. I do love the subtle flavor and it is like a flavored sashimi :)

    Foodiva...I am not surprised that your kids liked the cured salmon ...for it is much like a flavored sashimi. I am sure your kids love sushi :)

    Adriana...yea..the rosemary gave it a stronger flavor though not overpowering, giving the salmon a more fragrant taste to it :)

    Lizzy...yea not overpowering...just nice for our taste buds :)

    Saffron...mine was slightly more stronger coz I used rosemary instead of thymes...but just the same not overpowering... a perfect blending with the spices and cured salmon.

  14. Your dish turned out lovely. I enjoyed all the
    preparations for this and also the flavors, but
    couldn't get past the idea of raw seafood. One
    slice was enough for me. Since Tricia's family enjoys
    sushi I decided to give them a treat.
    Her schedule has been pretty hectic so this
    worked out well.

    Cakelaw...yea not all will like raw seafood but for me, I loved it :)

    acookingmizer....using rosemary instead of thymes turned out great too...the flavor is stronger and it blends well with the salmon :) yes you must try using rosemary the next time you make this :) I am sure you will love it :)

  17. Cher...yes I love salmon and this is one way to prepare them and I used this herbs infused oil pickled salmon as accompaniment for many dishes;)
