Yay! It's Friday ....it's FFWD and today's recipe is Salmon and Tomatoes en Papillote ....and you know why I am so happy....salmon being my favorite fish and favorite way of cooking fish....en papillote !!! I have all the ingredients at home - I have basil and rosemary herbs in my garden....all I have to do is just pluck a few sprigs from the garden and I am ready to go ! Dorie's recipe is always simple and I love the taste of the rosemary and basil infused gravy that comes from baking the salmon en papillote...so flavorful and tasty....LOVE it ! Cooking fish or meat in papillote has its advantage...the fish/meat remains moist and the flavor will be sealed in making this dish ' Heavenly '
This can be prepared a day or two earlier. If you have univited guests for dinner, this would be great. Simple and easy to prepare...less washing and it taste wonderful...you will have your guests licking off the last drop of gravy from their individual papillote :p That was what I did !!!....not a drop left in my papaillote ! The technique and combination of ingredients went well with the salmon. I have never used basil leaves for salmon and this is the first time and the herb infused gravy was not only sweet ( natural sweetness of the salmon ) but so flavorful too. I pan roasted the tomatoes with a dash of mixed herbs and olive oil till the skin crinkled before I put them together with the salmon.
I substituted lemon with grapefruit and it was a great combo for the salmon. I cannot describe how wonderful this salmon is .....

Dessert & Candy....oh it is lovely to use grapefruit instead of lemon for once. It blends well with the salmon and herbs. Beautiful !
Cher...yes yes orange is fine with this too except grapefruit has the slight bitterish taste...I shall try the next papillote with orange :) thanks for the idea. You did a good job on it yourself :)

ReplyDeleteOneWetFoot.com...yea..I planted a few herbs that I use most often for my baking and cooking in the garden. Convenient and save the wallet coz over here , fresh herbs are expensive :) yea for me cooking fish in papillote is most healthy and delicious :)
