Awww..one dish meal is great if it is well flavored ...came back late from work yesterday, so I made a simple one dish meal for the both of us. I love cooking en papillotte....especially if it is a one dish meal like this. Mmmm pasta with my favorite fresh button mushrooms and flavored with basil and white wine....simply slurpy ! Easy to prepare and Elin alone knows how wonderful this dish was :p Seriously, it was a satisfying dinner for the both of us. Healthy , delicious and a no fuss meal all en papillote.
While the spaghetti was cooking in the pot, I went around gathering leftovers from the fridge. some fresh brown and white button mushrooms and some pan fried breast fillets....ran to the garden, plucked some Thai basil leaves...sliced some garlic , some bird eye's chilli and the remnants of panfried meat....and by then the spaghetti was cooked half way through , drained the spaghetti in a sieve and leave aside while I sauteed the garlic and chilli with grapeseed oil. Add in the sliced mushrooms and continue to stir fry till half cooked. Before dishing up , add in black pepper to taste.
Get ready a piece of greaseproof paper ( big enough to wrap the pasta ) and place on a big plate. Place the half cooked spaghetti on the base, pour in the sauteed mushrooms on top of the spaghetti and place the basil leaves on top. Pour in 1/2 cup of chicken stock and 1/4 cup of white wine ( optional) . Wrap up the pasta into a packet and baked in the oven at 180ÂșC for 20 minutes. Serve hot.
this is truly a no fuss one dish meal...simple and yet aromatic.....
basil is a wonderful herb to add to the pasta...and of course
the white wine infused into the pasta made it perfect.
I know how wonderful it is to cook food en papillotte :)) for it helps to seal in the flavor. And at the same time keeps the food warm, while I go for a shower :p A papillotte each to ourselves LOL! I sat in front of the idiot box with my tired feet up and indulging in this flavorful one dish meal while watching the drama ....ahhh... this is what I called enjoying a feel of heaven on earth and a wonderful way to end a Monday ...... what do you say ? * oink oink
