A week before Josh came back for the weekend , he told me to prepare more meat stuff for him. He is into muscle building , so more meat for a growing young man. I bought chicken fillets and make patties for him so that he can munch through out the day on this patties :p A very simple recipe and easy to prepare patties . You can add in any spice ingredients you like...paprika , cajun powder , black pepper or any mixed herbs for flavor. But for this particular one, I used mixed herbs and a dash of paprika ....
Chicken patties are great snack food for growing children. They are usually served as a main dish but for Josh he takes them as snack in between meals. You must be wondering how he can eat them in between meals but for a person who has got a great appetite and who is obsessed with muscle..I guess this is nothing to him :) But they are small patties so I guess he can managed after all. He goes back to KL with a kilo or two added to his weight I guess :p Mother's love is always great....giving up her resting time to prepare these patties for him....:p so because of this reason I got a Mother's day gift from them...shall showcase them later..meanwhile just drool over these pictures :)
For these patties , I added some chopped jalapeno, chopped red bird eye's chillie, garlic ,and diced onions to the diced and chopped chicken fillets. Mixed in some japanese breadcrumbs and cornstarch and stir till the chicken mixture becomes thick and sticky. Shape them into small round patties of 1/4 inch thick and stack them alternately with plastic sheet so that they do not stick together . Keep them in container and store in them in the freezer till needed. Pan grilled them with grapeseed oil till brown on both sides. Sandwich them with curly endives and topped with tomatoes slices and garnish with Japanese mayo and sweet chilli sauce . Josh said it was delicious and chomped them down happily. I am happy when I see my kids eating well...healthy kids eats well .

ReplyDeleteThese look great. We make a version of grilled chicken patties, but yours looks delicious! My son is only 6, but it will be so soon before he is gone, and coming home! Time goes too fast!
