Fried Fish With Savoury Plum Sauce

I have been busy the last few days thus the lack of updating of posts here.  Work saps away my energy and came back too tired to think or cook anything nice.  Kept to simple cooking.  Pan fried fish and prepare a simple savoury sauce to go with it .  Wild Boar is not much of a fish eater but slowly trying to make him take more fish than meat :)  I do not know the actual name for this fish but I think it belongs to the red fish family.  But the texture is smooth and sweet.  The sauce is simply delicious...bursting with flavor of the east and is a great sauce for the fried fish.

The ingredients are mainly plum sauce, garlic , preserved black beans , shreds of ginger and some chopped chilli.   The combination is fantastic.  Everyone will love the sauce for sure unless you are allergic to fish :p  Even WB who is not a fish eater loves this preparation :)  This is a real appetizing fish dish . Simple to prepare and not much work involve.  For busy me, this is just good for me :)

Fried Fish With Savoury Plum Sauce

Ingredients :

Fish of your choice
1/2 tsp corn starch for coating the fish
1/4 tsp sea salt

Sauce:

2 tbsp of  plum sauce
3 pips of garlic - chopped
3 red chillies - chopped
3 slices of ginger - julienne
2 tsp of preserved  black beans
1/8 tsp of sea salt
3 tbsp of hot water

1 tbsp of grapeseed oil

Method:

Rub sea salt on the fish and coat the fish with corn starch.  Heat up wok with enough grapeseed oil for frying .  Fried the fish till crispy and cooked. Dish up and drain off excess oil and leave 1 tbsp of oil in wok. Saute the garlic, ginger till fragrant, add in the rest of the sauce ingredients and cook the gravy till it thickens. Pour the sauce over the fried fish and serve hot.

Enjoy a hearty meal with this dish :)

  1. I fried fish fillets and serve with chili, garlic, ginger and fermented soy bean. Plum sauce is a good choice too. :P
If I'm too tired, I'll skip the home cooking, hehe. But after a while, feel bored of out side food, and sure will back to simple home cooking. This is a cycle.

  2. This looks good. I also like sweet and sour minus the tomato sauce, use vinegar instead...something like this also.
