Pumpkins are very versatile in their uses for cooking . I make muffins, bread and cakes out of them ....the orange pigments in them are rich in beta carotene which generates vitamin A . They have a natural sweetness which kids love . I remembered my mom used to cook them with dried shrimps and curry powder. Those were the days and I miss my mom's cooking :(
I sometimes roast them as a side dish for my roasts . We had roasted pumpkin slices as a side dish for the roasted chicken whole leg with rosemary, lemon and garlic marinade that we had yesterday . I read somewhere that pumpkin extract may be a good product for pre-diabetic people as well as those who already have diabetes :) Ok, not too much on this side dish for the main highlight is the roasted chicken whole leg with rosemary, lemon and garlic marinade . A three ingredients marinade that burst sensations to the palate !
Who would have thought that rosemary ,lemon juice and garlic can form a perfect marriage and become one wonderful marinade for my roasts. The roasted chicken leg tasted garlicky with a slight tangy flavor and the aroma of rosemary infused into the meat was good , a burst of flavors that set my tongue dancing ! What more, with the pumpkin slices roasted to perfection with a dash of paprika and mixed herbs - mouth-watering side dish...mmmm lovely meal :)

Roasted Chicken Whole Leg With Rosemary, Lemon & Garlic Marinade
Ingredients :
2 whole chicken legs with skin on -
clean and pat dry with paper towel and rub with
1 tsp of sea salt
1 tsp of thick soy sauce
olive oil - enough for drizzling on the chicken legs
marinade sauce :
3 sprigs of rosemary herbs
1 lemon - juiced
6 pips of garlic- chopped
mix the marinade ingredients in a bowl and let them get to know each other well
Side dish :
1/2 organic pumpkin - peel off skin and remove seeds - cut into slices/cubes
a dash of paprika,
a dash of mixed herbs
1 tbsp of olive oil
Method:
Preheat oven to 200°C . Marinate chicken legs with the marinade sauce . Place the marinated chicken whole legs on baking sheet lined with aluminium foil. Drizzle enough olive on top of the whole legs and roast it for 40 minutes. Take out the baking tray after the first 20 minutes and place the pumpkin slices next to the chicken legs , sprinkle paprika and mixed herbs on the slices and drizzles olive oil on them. Put back into the oven and bake another 20 minutes or until the chicken legs are golden brown and cooked. Serve hot .

Kristy...yes , I used fresh rosemary. I have a pot of rosemary..growing well. Have to prune it often, tht is why my cooking mostly uses rosemary :p

ReplyDeleteLena...haha I rather his tongue dances then play sword with me * his tongue needs taming at times - too sharp like a two edged sword LOL! * yup he loves roasts with any marinade , so save time cooking chinese dishes whereby I have lots to wash up after that. Cooking in oven is cleaner and save time and energy :p
