Baked Chicken Fillets In Papilotte

Shallots and ginger are the main key ingredients in this recipe and with these ingredients rubbed onto the chicken fillets and marinated with oyster sauce and sesame oil... gosh ...you can imagine how fragrant this combo would be ! :)  Wonderful burst of flavors and no wonder my family love them prepared this way. Wrapped them in papilotte and baked for 20 minutes...juicy and moist tender chicken fillets with the wonderful aroma trapped in the papilotte to whet one's appetite.  A wonderful treat for Josh before he goes back to college.  The other version is to wrap them in greaseproof paper and deep fried them in a wok. But for health reason I baked them instead  :)  


When baking this fillets in papilotte, the whole house will be filled with the aroma of these two ingredients. I like my fish and meat cooked in papilotte. Seriously , the aroma is sealed in and the moistness of the meat is retained . Simple and easy to clean up after baking for those living a hectic life..............yup an example of one specimen ME !  LOL!  I have just finished watching one HK drama...Growing Through Life  * wink . 


Marinate the fillets with chopped ginger, chopped shallots, pepper, 
sesame oil, cooking wine, oyster sauce and
 thick soy sauce and it is best leave in fridge overnite so 
that the ingredients get infused into the meat and
give you the flavor that is due to this dish :)


wrap the fillets in greaseproof paper......


place the fillet filled papilotte in greased baking sheet 
and bake for 20-25 minutes in preheated oven at
250° C


cut a slit on the top of the papilotte and served it hot....
mmmmmm....yummy :p


who can resists these finger lickin' goodness....


this is a keeper and much much healthier compared to those
deep fried ones :)



Baked Chicken Fillets In Papilotte


Ingredients:

350 gms of chicken fillets

(A)
1 thumb sized ginger - smashed and chopped fine
6 shallots - chopped fine
white pepper to taste
3 tbsp of oyster sauce
1 tsp of thick soy sauce
a pinch of salt

1 piece of greaseproof paper for wrapping
grapeseed oil - greased the baking sheet

Method:

Marinate the chicken fillets with ingredients (A) in a zip lock bag. Leave it in fridge overnight.

Preheat the oven at 250ยบ C. Wrap the chicken fillets in greaseproof paper.  Lay the papilotte on a greased baking sheet and bake for 20-25 minutes or till fillets are cooked through. Cut a slit on top of the papilotte and serve hot with a bowl of hot steaming rice.

  2. Elin, great mind think alike!! I too just made the 'chee pau kai' last Friday but like you instead of frying it I baked it in the oven. But I used the chicken with bones in it and it took much longer to baked it. This look great.

  10. Kathy...yup we called it the 'chee pau kai ' but I baked it instead of deep frying :)
