All'Arrabbiata spice is used in italian pasta sauce . Arriabiata means "angry style", named as such due to the heat of the peppers. It is an Italian hot spice that consists of hot crushed pepper, dried garlic, dried tomatoes, carrots, celery, salt , parsley and dried mushrooms .
Piggy Cuz gave me a packet of this spice a month ago. At first I didn't know what to do with them . I searched the internet on how to use it. After reading up on it , I decided to use it to marinade the chicken legs and roast them for our dinner. Great explosive flavor and every mouthful of the roast tasted so good that I will use them again and oneday when the Piggies are back I will cook as pasta sauce for them . Seriously, it makes a good marinade on meat . I just discovered that it is a great complement for meat besides pasta :) Thanks Piggy Cuz for this magic portion !
It is peppery hot and it's fragrance , really is a killer . Every mouthful of this flavorful roast will take you back ito an Italian kitchen. The spice is so authentic ...I will ask Joanna to get me a few packets when she goes for her Euro tour coming October :) I love Italian herbs and now I am in love their spices too..... this roast is so good that I want to make this again . All I did was to rub this arrabiata spice on the meat and add plain yoghurt and chopped fresh rosemary and marinate the chicken legs for 1/2 hour. Drizzle olive oil on them and roast for 35-40 minutes at 200ºC till the golden brown and cooked.

just rub the spice all over the chicken legs, add yoghurt and

at least 1/2 hour...before roasting
line the baking tray with aluminium foil before roasting
at 200ºC for 35-40 minutes
Half way thru roasting , add in the baby carrots and sprinkle
dried mixed herbs and salt and olive oil on the baby carrots
Roast baby carrots are good accompaniment for roasts
any kind of roast....rich in vit A and it is flavorful with the
mixed herbs sprinkled on them ....

Roast Chicken Leg With All'Arrabiata Spice & Yoghurt
Ingredients:
2 chicken legs with skin on - cleaned and wipe dry
a pinch of salt - rub on chicken legs
2 tbsp of all'arrabiata spice
chopped rosemary
4 tbsp of plain yoghurt
4 tbsp of plain yoghurt
baby carrots - amount depends on individual
dried mixed herbs
olive oil

Clean and wipe dry 2 chicken legs. Rub salt and arrabiata spice on the legs. Add yoghurt and chopped rosemary and rub evenly . Leave it to marinate for 1/2 hour. Line a baking tray with aluminium foil. Place the marinated legs on the foil , drizzle with olive oil and put into the preheated oven at 200ºC and roast for 35-40 minutes till golden brown and cooked. Add in baby carrots half-way through roasting . Sprinkle mixed herbs and olive oil all over the carrots. Take out the roasts and carrots and served hot.

ReplyDeleteThis is quite like the Tandoori Chicken with some spice and yogurt marinated. Must a very flavorful and delicious. I like the carrots sitting at the side, wonderful complete dish!

ReplyDeleteI would love to get a hold of All'Arrabbiata spice to try to cook with. Though I've tried a purchased tomato sauce with this spice, I haven't tried the All'Arrabbiata spice. The dish sounds delicious!
