Preparing this meal yesterday was one of a surprise for Daddy and myself. I was flipping through this month's Flavour magazine and each and every recipe was mouth-watering ! So, the greedy and hungry mind just took over and hence this surprise meal. A combination of east and west ! Thai roast chicken with Burmese Tomato Salad and Organic Pea Sprouts as a side dish and I added Asparagus Spears Wrapped With Bacon...hmmmm you tell me, greedy mind ...yes ? A blend of east and west and Daddy asked me what in the world are these....referring to the burmese tomato salad LOL! Raw dried shrimps in the tomato salad ...whoa no wonder he was taken aback by the raw fishy smell of dried shrimps.....hahaha but he finished all though LOL! so it must be appetizing after all :p
A blend of east and west....as long as Daddy enjoyed the meal, I don't mind putting up a bit of work after all it was a weekend. A hearty and delicious meal. I love oven cooked meal...easy job actually...chuck everything into the oven and that's it.....healthier than deep fried stuff. Less washing up :p Grapeseed oil is good for health and I used them generously in my cooking lately.

till I saw the burmese tomato salad and
I can't wait to try that out too thus having two veggies
made this for Daddy....I have to use up the asparagus or
it will dry out in the fridge :)
this is the delicious , appetizing burmese tomato salad
lots of pickled red onions, crispy garlic flakes, bird eye chilli , tomato
and peanuts and chopped coriander leaves and not to forget the raw dried shrimps
these organic pea sprouts are best taken raw...
lots of protein , vitamins, minerals and enzymes
but if you lightly sitr fry them, you still get the benefits as taken raw.
I lightly stir fry them coz Daddy cannot take them raw,
too green smell for him. I stir fry them
with lots of garlic...yummy
Thai Roast Drumsticks
Ingredients:
2 drumsticks
1/2 tsp crushed black pepper
2 tbsp of tom yom paste
3 kaffir lime leaves - cut into fine shreds
Method:
Marinate the drumsticks with tom yom paste and black pepper for 1 hour. Roast them in preheated oven at 200 deg C for 35-40 minutes. Half way through add the kaffir lime leaves on top of each drumstick.
Asparagus Wrapped With Bacon
Ingredients:
1 bunch of asparagus spears - wash and drain dry
a few pieces of smoked bacon
Method :
Wrap the bacon round a few asparagus with a cocktail skewer . Repeat till all the asparagus are used up. Drizzle grapeseed oil over the asparagus spears. Baked them for 20 minutes in the oven till the bacon and asparagus are cooked and the bacons are crispy brown.
Burmese Tomato Salad - adapted from Flavour Magazine July-August ,2010 Issue
Ingredients:
8 tomatos, seeded and sliced
10 red cherry tomatoes, halved
10 yellow cherry tomatoes, halved
1 large onion, sliced thinly, soaked in water for 10 minutes and drained
4 bird-eye chilles, sliced
3 sprigs of coriander leaves, chopped
3 tbsp of dried prawns, soaked and chopped
5 tbsp of crispy garlic flakes
6 tbsp of tosted peanuts, chopped
1.5 tbsp of peanut oil * I used olive oil
1 tsp fish sauce
2 tbsp lime jiuce * I used lemon juice
salt to taste
Method:
In a mixing bowl, combine all ingredients well. Arrange on a plate and serve immediately.
* Usually served as a side dish for lunch or dinner.
Organic Pea Sprouts
This can be served raw or lightly stir fry. I used served this lightly stir fry with lots of garlic and salt.

What a good idea to use Tom Yum as a marinade. I love the color of greasy oil as well as the health benefits it brings.
