Another dish that Josh likes is this Kaffir Lime Leaves Flavored Chicken Bits. Very exotic in taste, a blend of spiciness with the strong aroma of preserved black beans and enhanced by local fresh herb , the lovely fragrance of kaffir lime leaves . Appetizing to the dot. Chicken breast, cut into bite size making it easier for the aromatic flavor to be infused into the meat. If you like something savoury, this is a flavor packed chicken dish :) Simple and yet easy to prepare dish. Good for people like me who just want to sit in front of the idiot box and watch the soapy korean drama :p These korean dramas are so addictive....just like their kimchi !
I will be looking for simple and yet flavorful dishes from now on lol! thanks to the korean dramas...nope I was just kidding.....Daddy will not be happy reading this, he said I spend too much time chasing after dramas that will make me weepy , or I will be spending too much time baking away and leaving him alone....* why men can't just be addicted to korean dramas !!!! * :p
you can use any part of the chicken to cook this dish...it is just that
my Josh loves chicken breast...he won't eat any other parts...so picky
and I hate the breast part ...I mean chicken breast :p
yummilicious flavor packed chicken bits
Kaffir Lime Leaves Flavored Chicken Bits
Ingredients:
2 chicken breast - cleaned and cut into bite sized
1tsp of light soy sauce
2 tsp of corn flour
(A)
2 pips of garlic - chopped
4 bird eyes chilli - chopped
4 kaffir lime leaves - cut into shreds
1 tbsp preserved black bean - washed and lightly crush
1/2 tsp fermented soy beans - chopped fine
3 tbsp of Thai sweet chilli sauce
2 tbsp olive oil
coriander leaves- garnishing
Preparation :
Marinate the chicken bits with corn flour and light soy sauce. Leave for 10 minutes. Heat up a non-stick wok/pan with 2 tbsp of olive oil, saute the ingredients (A) till fragrant. Add in the seasoned chicken and sitr fry till the chicken bits are well coated and cooked. Dish up , garnish with coriander leaves and serve with hot steaming white rice.

Some of my favorite flavors are in this dish! I really like to use Kaffir lime leaves in Asian dishes. There really is no substitute that tastes the same.

Gert...you can used tom yam paste to fried rice..then cut some kaffir limes leaves into shreds , add to your fried tom yam rice. One way to use your kaffir lime leaves :)

Angie...are there any asian grocery at your place ? But without the kaffir leaves, it will taste slightly different. The Kaffir lime leaves makes it more aromatic and exotic.
Those chicken bits look seriously tempting! I am intrigued by kaffir lime leaves, I would like to find them sometime soon!
