Italian Chicken Stew



It was Pot Bless time again last Sunday!   I just didn't know what to cook and bring for the pot bless and after putting the brain in full motion, I decided that I should cook Italian Chicken Stew....a dish , to be enjoyed by the  the young and old  :) And you know what ? This dish turned out to be the house favourite that night.  A very flavorful and tasty chicken stew infused with aromatic italian herbs ....a beautiful stew to serve with pita bread, pasta or steaming hot rice.



This is a dish that is easy to prepare . A nutritious and flavorful italian chicken stew for a cold night. After a heavy downpour in the evening,  the night was  cold and this stew was just right for the night. I love the aroma of the stew exuding from the pot while simmering away. The flavorful gravy absorbed into the soften potatoes and carrots , truly makes them tasty and lip-smacking good !  Needless to say, when the lady guests found out that it was yours truly who brought in the dish, most of them asked for the recipe.  Only the men will never bother about such things....they will just eat whatever is served at the table and keep their stomach filled  LOL! 



ingredients used for this dish are chopped garlic, red onion cubes,
potato cubes ,carrot cubes , tomato puree, oyster sauce and italian herbs
and not to forget the chicken pieces


saute all the ingredients together
and simmering over low heat produces the best result for this dish :)


simmered till the gravy thickens and the chicken is tender and soft


I  kept some for Daddy....he couldn't make it to the pot bless party :(


I can't tell you how good this stew is until you cook it yourself :p

I have put up this Italian seasoning-  a blend of herbs -
oregano, basil, red pepper, marjoram, thyme,
rosemary, sage and parsley


Italian Chicken Stew
serve 10 persons


Ingredients:

5 chicken breast - remove skin and cut into cubes - marinade with light soya sauce & 1/2 tsp of cornflour
8 russet potatoes - cut into cubes
5 carrots - cut into cubes
red onions- cut into cubes
fresh cherry tomatoes - cut open

10 pips of garlic - chopped
1/2 tbsp of black peppercorns - crushed
3 tbsp Italian herbs seasoning - tesco brand
4 tbsp of olive oil
a small can of tomato puree
6 tbsp of oyster sauce
1 tbsp of sugar
2 cups of water
salt to taste

thickening:
mix together 1 tbsp of cornflour + 1/4 cup water


Preparation :

Heat up olive oil in a non-stick pot and lightly saute chopped garlic, big onion cubes and black pepper for a few minutes,add in the potato cubes and carrot cubes and stir them together  for another 5 minutes, add in the tomato puree, oyster sauce and italian herbs and lastly add in the chicken pieces and cheery tomatoes and stir till well combined. Add in enough water and simmer under low heat till the potatoes and carrots have soften and the chicken pieces are tender and soft . This may takes 1 hour. Keep stirring at 15 minutes interval to avoid the bottom from burnt . Add salt and sugar to taste and add in thickening last.  Off heat and serve hot with pita bread, pasta or hot steaming rice.

Madin...It is actually Pot Luck but we called it Pot Bless...coz we will invites friends and relatives who are not christians to come for the gathering where each member will bring something for the gathering. There will a time of sharing. And we do this like once every two months. At the same time fellowship with each other for the church members. More for evangelism :)
