Peppery Meat Tenders



When you have meat eaters in the house, you really have to crack your head how to prepare that meat dish for them :p  Especially breast eater  chicken breast eater I mean :)  Piggy boy will only eat the breast part, so I have to think how to prepare them and since he likes black pepper I made him meat tenders using black pepper , cajun and potato flour and garlic salt  to coat the meat and pan fried them till crispy on the outside and tender juicy on the inside.  A simple and yet finger licking good meat tenders for those who love meat.
I know that it is not too healthy eating heaty stuff like this but I have not been cooking meat dishes for him since CNY and he doesn't like to eat steamed meat so have to pamper him a little bit since he likes his meat roast or fried.  My rosemary plant is growing nicely so I plucked some to garnish on the meat tenders for him and he was so fascinated. He said his food looks better and taste better nowadays LOL! He told me to learn to take good shots of my food and learn up the technique on food photography. He likes people who want to improve themselves..heehee I am so glad that now it is his turn to encourage me and I know deep down my Piggies are proud of their Momsie.  And when I talked to him about DOF he was really impressed :p  Ahhh..this is the only time I have his full attention ! Never under estimate this Momsie :))  Seriously, I wish I have more time to master up the art of food photography. I really love this subject and I pray I will grow stronger each day and healthier too in order to be able to indulge in this hobby of mine :)

Peppery Meat Tenders

Ingredients :


2 chicken breast - cut into 1/4" think slices
season with a tsp of light soy sauce - leave to marinade
for 1/2 hour 


1 egg white
potato flour for first coating


Flour coating A
1.5 tsp toasted ground black pepper
3/4 cup potato flour
1 tsp of garlic salt
( toss these ingredients together )

Oil enough for pan frying

Method:

Heat a non stick frying pan with vegetable oil under medium heat.  Coat the slices of meat with potato flour, dip in egg white and coat them with the flour coating A . Pan fry them in hot oil till crispy on the outside and cooked inside. Take them out and place them on paper towel to absorb the excess oil.  Serve with chilli sauce of your choice.
