Dimply Mango Cake




Mango is my favourite fruit besides the king fruit durian. Mango salsa, mango pudding, mango mousse, mango sorbet, mango ice cream...you name it and I will fall for it :) I saw this recipe Dimply Plum Cake by Dorie Greenspan on Piggy's Cooking Journal, I am a sucker for mango thus I tweaked it and used mango instead of plum :)) It tasted good and the texture of the cake - moist, soft and mango scent was so original and my blogger friend Reanaclaire of Caring Is Not Only Sharing , was so in love with the cake that she wants to learn how to bake it :p Why Reana? Becoz she gave me the mangoes and I took the opportunity to bake her this delicious cake in appreciation of the love gift she gave me....sweet aromatic mangoes! She really knows the way to my heart and she hits bull's eye! Smart gal ...this dimply plum mango cake has been in my long long To-Do List, and now I finally got it baked :)) Good recipe , good cake and the non-stop praises from Reana was enough to make me float on cloud 9 on a gloomy Tuesday morning.....mmmm thanks Piggy for sharing this recipe with us. This is the fourth recipe I have tried out from her blog. I love her blog! :))) I will make this again and again!

Dimply Plum Mango Cake - adapted from Piggy's Journal with a tweak

Ingredients
1 ½ cup All Purposes Flour
2 tsp baking powder
¼ tsp salt
¼ tsp ground cardamom ( optional) * I omitted this
5 tbsp unsalted butter, room temp * I used 80 gm
¾ cup packed light brown sugar * I used combination of natural mollases sugar & brown
sugar
2 large eggs
1/3 cup flavorless oil, such as canola or safflower * I used sunflower oil
Grated zest of 1 orange * I used lemon1 ½ tsp pure vanilla extract

8 purple red plums – halved and pitted * I used 2 mangoes- 1 ½ cut into slices for deco
- ½ - chopped and mashed
Method:

Center a rack in the oven and preheat the oven to 350ยบ F. Butter an 8 inch square baking pan, dust the inside with flour, tap out the excess and put the pan on a baking sheet.

Whisk the flour, baking powder; salt and cardamom, if you’re using it, together.
Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixerin a large bowl, beat the butter at medium speed until soft and creamy, about 3 minutes. Add the sugar and beat for another 2 minutes. Add the eggs, one at a time, beating for a mixture after each addiction. On medium spped, beat in the oil, orange( lemon if you are using ) and vanilla. The batter will look very light and smooth, almost satiny. Reduce the mixer speed to low and add in the mango ( the ½ chopped and mashed) and add in the dry ingredients ( flour & baking powder & salt ) mixing only till they’re incorporated * you can fold in the dry ingredients with a spatula *

Run a spatula around the bowl and under the batter, just to make sure there are no dry spots, then scrape the batter into the pan and smooth the top. Arrange the plums cut side up in the batter mango slices on top the batter.

Bake for about 40 mins or until the top is honey brown and puffed around the plums mango slices and a thin knife inserted into the center of the cake comes out clean. Transfer the cake to a rack and cool for 15 minutes during which time the plums’ juice mango juice will return to the fruit- then run a knife around the sides of the pan and unmould the cake. Invert and cool right side up.

    this looks good and my son loves mango, will definitely make this but have a couple of questions:
    1) the recipe states 8 inch square pan but i saw that your cake is round. did u use a 8 inch round pan?
    2) recipe states "invert and cool right side up".r the mango slices facing upwards ?

  7. I would omit cardamom like you did ... i prefer sweet to spicy cakes :) Your mango slices look perfectly embedded in the cake! How pretty! And I am sure it tastes awesome. With mango bits hidden all over the cake, it must be heavenly.

    i have posted a question under the pickled ginger blog ie. the rice vinegar used for pickled ginger, is it the same as the vinegar that is added to cook the sushi rice? If not, what is the brand of vinegar that you use? Thks

    1. yup the recipe calls for a 8" square pan but I wanted a lower height cake so I used a 10" round pan:)
    2. yup, the mango slices top facing up
    3. no, it should not be lumpy, it shld be smooth and the batter is slightly thick as u can see in the second picture.

    @ The Little Teochew : Haha this is a good recipe..i think you will love it...perfect for afternoon tea with a cuppa coffee or tea...yumm the recipe did not call for mango bits but I added it to make it more flavorful :p

    @ May : Hi May...so sorry to have overlooked your comment, I normally don't check my older posts comments ;p Yes....japanese rice vinegar that u use to make sushi would be ideal. And make sure the gingers are young ones :)) so that u get the pinkish tinge after the pickle process. Hope this answered your question :)
